Today we are looking at turning a classic treat into something a little more wholesome. Rice crispy squares are a wonderfully easy treat to make and with a few little adjustments can be healthy too. Here’s what you need.
Ingredients:
60g Coconut oil
100g Meridian Crunchy cashew butter
30g Meridian malt extract
80g Puffed brown rice
40g Desiccated Coconut
20g Chia Seeds
50g Chocolate chips
First melt the coconut oil, cashew butter and malt extract in a saucepan. In a separate large bowl combine the dry ingredients together (rice, coconut and chia seeds).
Once the cashew butter mixture in melted pour onto the dry ingredients and stir until all the rice is covered.
Transport the mixture onto a baking dish. Melt the chocolate chips and drizzle over the mixture.
Leave in the fridge for an hour so they firm up.
Finally cut into squares and enjoy
