No Basil, No Parmesan cheese, No pine nuts – how is this a pesto I hear you ask? This is a little twist on the traditional pesto but is so so good. Give it a try.
Ingredients:
250g Sun-dried tomatoes
70g flaked almonds
1 clove of garlic
3 tbsp Balsamic vinegar
1 tsp cayenne peeper
100g Olive oil
Sea salt
In a food processor add the sun-dried tomatoes and flaked almonds. Whiz together to get a nice paste. Add your seasonings next garlic, balsamic vinegar, cayenne pepper, olive oil (if the sun-dried tomatoes are already in oil go easy on the olive oil) and salt. Whiz again until a nice uniform sauce is created. This sauce goes great with pasta.

In my early 20s, I worked in export for a well-known sports company in Germany. But I had a dream of living abroad. That dream led me first to Ireland, then to Australia, and eventually back to Ireland—where I’ve made my home ever since.
