Avocados are such a diverse fruit, we just love using them. They add a wonderfully creamy texture to desserts. If you are looking to stay on track for your 5 a day but at the same time treat yourself, this is the recipe for you. Here’s what you need:
3 ripe avocados
3 tbsp cacao powder
30g agave syrup
3 tbsp coconut milk
1 tsp vanilla extract
1/2 tsp salt
For the topping:
1 tbsp cacao nibs
1 tbsp crushed cashews
1 tbsp flaked almonds
Place all ingredients into a food processor except the ingredients for the topping. Blitz until you get a uniformed texture with no lumps. Spread your mixture out into little cups and chill in the fridge for 30 mins. When ready, top the pudding cups with cacao nibs, cashews and flaked almonds (chopped up fruit is also really good).
